FAQs

What is the difference between Mexican rice and Spanish rice? ›

One of the main differences between these two rice dishes is that Mexican rice is fluffier and tends not to stick together. Whilst Spanish Rice is known for that rich yellow color, Mexican Rice is best known for its reddish orange hue that it gets from being cooked with cumin.

Why doesn't my Mexican rice come out fluffy? ›

Top tips for the perfect fluffy (not sticky) rice:

Rinse your rice in cold water before cooking to remove some of the starch. Sauté the uncooked rice in a little olive oil to lightly toast before adding the liquid. Stir frequently to make sure the rice doesn't burn.

Why is my Mexican rice hard? ›

If the heat is too high, the water evaporates before the rice has a chance to fully cook. If you don't add enough water, the rice ends up dry and crunchy. And if you don't cook the rice long enough, it gets soft on the outside but doesn't cook through.

Why does Mexican restaurant rice taste better? ›

In addition, a traditional blend of spices and diced vegetables and potatoes create unique flavor.

What can you add to rice to give it flavor? ›

Add lots of pepper. Stir in a couple of tablespoons minced fresh herbs, ideally warmed first in melted butter. Cook a couple of tablespoons minced garlic, leek, scallion, or shallot in olive oil or butter until just soft to add while fluffing. Add lemon juice to taste (great with butter and pepper).

What makes Mexican rice mushy? ›

The rice should be a tiny bit on the dry side (but still soft and fluffy). If your rice is really wet and mushy, you probably added too much water and/or overcooked it.

What is the secret to fluffy rice? ›

You want the heat to be high enough so that steam is always being formed in the pot, but not so hot that the rice scorches on the bottom of the pot. When the boiling dies down a bit, cover the pot and set the timer to 20 minutes. Remove the lid of the pot, and your rice is done.

How much water do I need for 1 cup of rice? ›

For tender grains of rice that easily separate, such as in a pilaf, use 2 cups of water for every 1 cup of rice. You can also use another liquid like stock in this 2:1 ratio. For slightly chewier, fluffy white rice, use 1 1/2 cups of water for every cup of rice, or a 1.5:1 ratio.

How do you moisten dry Mexican rice? ›

Whatever the case, if your rice is looking dried out, or the texture is still hard or crunchy when all the liquid has been absorbed, add up to ½ cup water and return to a simmer with the lid on. Be patient. Don't raise the temperature to rush the rice—that'll just put you right back where you started.

Why does my Mexican rice taste bitter? ›
